Method:
Heat oil in a pan and add chopped onion. Fry onion till it becomes translucent.
Then add chopped tomatoes and fry till it becomes soft.
Then add chopped mixed vegetables and fry them.
Then add cumin, red chilly powder and salt. Fry until the vegetables are cooked.
Beat the eggs in a bowl and keep it aside
Once when the vegetables are cooked add the beaten egg to the frying pan.
After 3-4 minutes, fold the omlette into two and leave it to cook for another 3-4 minutes.
Garnish with cheese and Vegetable Omlette ready to taste as a breakfast meal.
